Pie Crust Recipes

When I realized I needed to master the art of a homemade pie crust for a pot pie, I turned to my friends who are experienced bakers for their recipes. Always use very cold shortening, butter and ice water. Slightly chill the dough before rolling out. Before baking a double crust pie, brush the pie crust with egg white and sprinkle with sea salt. Bake pies according to recipe directions. 

Shortening Recipe For A Single Crust Pie

1 1/3 cup all purpose flour

1/2 teaspoon salt

1/2 cup shortening, chilled

3 tablespoons ice water

Shortening Recipe For A Double Crust Pie

2 cups all purpose flour

1 tablespoon salt

3/4 cup shortening, chilled

1/4 cup ice water

Combine flour and salt in bowl of food processor. Pulse to combine. Add shortening a bit at a time, pulsing after each addition. Add water 1 tablespoon at a time until mixture forms a ball. Chill and roll out.

Butter Recipe For A Double Crust Pie

2 1/2 cups all purpose flour

1 cup unsalted butter, chilled, cut into cubes

1 teaspoon salt

1 teaspoon sugar

6 to 8 tablespoons ice water

Combine flour, salt and sugar in bowl of food processor. Pulse to combine. Add butter a cube at a time, pulsing after each addition. Add water 1 tablespoon at a time until mixture forms a ball. Chill and roll out.
