Lacto-Fermented Watermelon Salsa

A refreshing and probiotic-filled summertime treat! We use 'Fooled You', a mild jalapeno-type pepper for this recipe. If you are substituting a hot pepper, you may need to adjust the amount of diced peppers called for in this recipe. 

6 cups diced watermelon

1 cup diced red onion (Confession: I was out of red and substituted a yellow onion for this batch...red is best)

1/2 cup 'Fooled You' peppers, diced

1 tablespoon finely ground pink Himalayan sea salt

1 tablespoon dried cilantro flakes or 3 tablespoons fresh cilantro, finely chopped

3 tablespoons lime juice

Optional: 1/2 cup whey

Combine all ingredients in a large mixing bowl. Stir and allow to macerate for 10 to 15 minutes. Place mixture in jars leaving headspace to provide room for expansion during fermentation. Allow to ferment for 2 to 3 days, stirring once or twice daily. Place jar in refrigerator where it can be stored for 2 to 3 weeks.
