Lacto-Fermented Aronia Berry Relish

Aronia Berry Relish

2 large red apples, washed and cored, cut into quarters
1 cup fresh or frozen Aronia berries
2 teaspoons ground cinnamon
1/4 cup sucanat
1 teaspoon sea salt
1/4 cup whey

Using a food processor, chop the apples and aronia berries until they reach relish consistency. Pour into a large bowl and add the cinnamon, sucanat, sea salt and whey. Mix together with a spoon, smashing the mixture until juices are flowing. Pack tightly into a jar leaving about 2 inches of headspace. With a fork, push mixture under liquid. Open jar daily and gently stir the relish with a fork to combine liquid into apple and aronia berry mixture then push under liquid. Allow to ferment for 2 to 3 days. Pour 3 to 4 tablespoons of whey over relish before storing in refrigerator. The whey will reduce the relishes exposure to air and will increase storage life. Can be stored in refrigerator for 1 to 2 months.
