Garden Fresh Beets In The Instant Pot
Yes...I have been known to let my beets get a bit ahead of me in the garden. Occasionally they reach the size of baseballs and would take forever to cook without the Instant Pot!
Place 2 cups of water into the liner of the Instant Pot. Insert a steamer basket into the liner. Wash beets and trim excess stem area. Place beets onto steamer basket. For beets measuring 2 to 2 1/2 in diameter use the manual/high pressure setting for 25 minutes. My baseball sized beets required 45 minutes. Perform a quick release. Allow beets to cool before peeling skin.
